chocolate cake

layers of chocolate genoise soaked in syrup laced with rum / freshly whipped cream with chocolate meringue and pomegranate seeds / topped with whipped chocolate ganache.
didn’t want to post this up initially - wasn’t very satisfied with the cake and the photos were hastily taken; but the family likes it and i think that if executed properly, i might actually like this cake … hence the appearance.
when eaten alone, all the components were good - the genoise recipe adapted from alice medrich’s bittersweet is pleasantly bittersweet and the whipped cream is barely sweetened.
the chocolate meringue had a delicately crispy crust and a moist chewy centre which was supposed to act as a textural foil to the richness of the cake. after a night of maturing in the fridge, the meringues completely disintegrated and was lost in the smothering of cream.
what i envisioned was a tart swirl of concentrated pomegranate reduction but the reduction i made was not viscous enough and i had to make do with smatherings of pomegranate seeds.
the best laid plans of mice and men often go awry.
