
i do not approve of the sprinkles.
i made these cupcakes for my sister’s wedding solemnisation ceremony quite some time back.
with the crazy spells of hot weather here, i figured that using some fruits would be refreshing and interesting texturally. because i’m masochistic, i came up with 2 variations.
1. chiffon cupcakes flavoured with lemon zest, filled with lemon cream (from pure desserts) and blueberries. there’re no pictorial evidence unfortunately.
2. vanilla chiffon cupcakes, filled with chiboust cream (from rose’s heavenly cakes) and strawberries. the picture below is from a previous post.

both types of cupcakes were frosted with vanilla mousseline buttercream (from the cake bible) spiked with a little liquor.
the cupcakes were devoured; everyone loved it and some went back for seconds. the only one who didn’t finish the cupcake was this little boy. i’m sure most bakers will understand this - i had to resist the impulse to march up to him and ask him for a thorough dissection of the cupcake (not because i’m insulted, but because a huge part of the joy of baking is the expression of pure satisfaction you see when someone eats your bakes).
